Serving Up: The Mayahuel at Underworld

Located in Southington’s walkable downtown among the restaurants and shops is Fable, a unique teahouse and gift boutique offering more than 60 loose-leaf teas and elixirs brewed to order. By night, the space becomes Underworld, where guests gain access through a special entrance to find a craft cocktail lounge with libations inspired by mythology from around the globe. Owned by Tina Parziale and Evan Seide, the space is decorated with antiques, custom lighting, plants and other whimsical touches that bring the natural world and fantasy together. Each cocktail or mocktail infuses pure and natural ingredients with quality spirits, and guests have the option of purchasing a ritual tailored to each. “All of our cocktails in the Underworld are inspired by deities of the afterlife from cultures around the world,” Parziale said. “Each cocktail has a unique ‘ritual’ that connects our guests to the essence and story of that deity, providing an opportunity to set an intention. These rituals offer our patrons an alternative, intentional way to imbibe spirits.”

Cocktail: Mayahuel

Ingredients:

  • 1.5 oz. lemongrass-infused* Lost Lore Reposado Tequila
  • .5 oz. Unico Amaro Siciliano
  • 1 oz. Fruitful Prickly Pear Liqueur
  • .5 oz. freshly squeezed lemon juice
  • Garnish: fresh prickly pear or a flower petal

Method: Measure and pour your ingredients into a shaker with a scoop of large ice cubes. Shake for 5 to 8 seconds and double-strain into a chilled coupe glass. Garnish with a slice of fresh prickly pear on a toothpick or a flower petal (or both).

*Directions to make the infusion

  • 1 mason jar (12 oz. works)
  • 8 oz. reposado tequila
  • 3 tbsp. dried lemongrass
  • fine mesh sieve (or tea or coffee filter)

The Mayahuel.

Instructions: Place your dried lemongrass in a sanitized mason jar. Add the tequila. Screw on the lid and label the jar with the ingredients and the date. Shake the closed jar vigorously. Let this infusion sit for at least 24 hours, shaking it a few times when you think of it. After 24 hours, strain your infusion through a filter (a tea filter, coffee filter or fine mesh sieve will work).

“We crafted this cocktail in honor of Mayahuel. She is the Aztec goddess of fertility whose dismembered body became the agave plant, from which we get tequila. The lemon, amaro and prickly pear are present to bring balance to the cocktail. They also remind us that although life can be a touch tart and bitter at times, it is overall sweet,” said Tina Parziale, Co-owner, Underworld at Fable. “Mayahuel symbolizes abundance and prosperity. She invites us to celebrate our blessings, to be grateful for that which we have in excess and to share it generously.”
