Highland Imports added Zomoz Espadin Joven Mezcal to its spirits offerings. Mexican-owned and -operated, every aspect of Zomoz is made and supervised by Mexican hands from Santiago Matatlán, Oaxaca, in the heart of the indigenous Zapotec region near Oaxaca City, the state’s capital. Handcrafted by fourth-generation Maestra Mezcalera Isabel Santiago at her family’s organic agave plantation and Palenque, the mezcal is made with three simple ingredients—100% organic agave, native yeast, spring water—and no additives. Zomoz Espadin Joven Mezcal uses organic espadin and pure spring water, undergoing ethical cooking, tahona wheel crushing and open pine vat fermentation. After double distillation and proprietary filtration, Zomoz delivers a pure and smooth finish. Tasting notes include fresh agave, stone fruit, leather and a hint of vanilla, which give way to dry lemon and white pepper. The finish is long and smooth with lightly smoked and caramelized agave, wild marigold and an earthy minerality.
