Located in the heart of Farmington Valley, Farmington Polo Club is a historic equine facility, event venue and dining destination. The club was originally founded in 1929 and became affiliated with the United States Polo Association in 1938. With its 80 acres of manicured fields, and its indoor and outdoor spaces, the club offers fine dining and drinks among a clubhouse dining area and bar, patio, wedding gazebo, tents and more. The team pays as much meticulous attention to its cuisine and beverage program as it does the polo grounds, setting the luxurious scene for any of its private or public experiences. As the season turns, a cucumber, crisp cocktail enlivened with tequila is the recipe of the month.

Cocktail: Pepino Blanc

Ingredients:
» 1.5 oz. Don Julio Blanco
» 1.5 oz. Cucumber-infused Stoneleigh Sauvignon Blanc*
» 2 oz. Goslings Ginger Beer
» 0.5 oz. fresh lime juice
» Garnish: freshly shaved cucumber ribbon

Method: Fill your Collins glass with ice and allow to chill. Pour Goslings Ginger Beer over the ice, add fresh lime juice and then add cucumber infused Stoneleigh Sauvignon Blanc. Finally pour the Don Julio Blanc, stir briefly and garnish with cucumber ribbon.

*Infusion: You’ll need 1 bottle of Stoneleigh Sauvignon Blanc, 1 empty bottle of Stoneleigh Sauvignon Blanc, ½ a cucumber and a fine mesh cone strainer. Take half the cucumber and cut into batons (sticks). Leave seeds and slice the cucumber small enough where it’ll easily fit into the empty bottle of Stoneleigh. Fill the empty bottle (which has been rinsed and sanitized) with the batons. Next, add the wine, screw on the cap, date the bottle and lightly shake for a couple minutes. Do this the night before so it’s ready to use for the next shift (10–12 hours in all). Strain the infusion and it’s ready to use.

The citrus notes from the Stoneleigh are enhanced by the crispness of the fresh lime, with the spicy boldness of the Goslings is subdued by the infusion,” Bartender Jeremey Fioravanti said. “A light sweetness lingers from the marriage of cucumber and agave notes in the Don Julio, creates a spring cocktail that’s easy to enjoy. You can easily swap the tequila for a Plymouth or Navy Strength Gin, making it even more versatile.”
