In the spring of 2025, Sift Bake Shop and A.T.Y Bar & Bonbons, presented by Grey Goose, celebrated their grand opening at Mohegan Sun. Both are family-owned concepts created by Pastry Chef Adam Young and his wife, Ebbie, and the venues are located at the Winter Entrance in Casino of the Earth. Sift Bake Shop is a 2,930-square-foot bakery that features a variety of artisanal breads, breakfast pastries, and sweet and savory delights. Adjacent to it is A.T.Y Bar & Bonbons, a boutique concept which includes a 570-square-foot bar that pairs delicately crafted cocktails with decadent chocolate handmade bonbons. A.T.Y also serves small plates, including cheese and charcuterie and the dip trio, comprised of rotating dips with a toasted baguette to pair with the bar’s seasonal, original offerings, which also include a variety of wines.

Ingredients
- 2 oz. White Peach & Rosemary Grey Goose
- .5 oz. yuzu liqueur
- .5 oz. lemon juice
- .75 oz. hot honey simple syrup
- 10 drops saline
- 2 oz. peach rosemary granita
- Garnish: raspberry powder

Minas Melba at A.T.Y Bar & Bonbons at Mohegan Sun.
Method: Add the Grey Goose, yuzu, lemon juice, hot honey simple syrup and saline to a shaker. Shake for 10 seconds to chill and aerate. Pour over the granita into a Nick & Nora glass rimmed with raspberry powder. Serve with a raspberry Milano cookie, a peach saffron bonbon and enjoy.
“The Minas Melba has been a labor of love. Many renditions were tested. Pulling inspiration from the Grey Goose peach rosemary botanicals, I was able to create a cocktail that embodies a front porch sunset. In the bar, we are able to batch this cocktail and wash it with milk to give it a creamy, smooth mouthfeel that is balanced with the citrus,” said Bar Manager Elise Minas.
“The peach rosemary granita is my favorite part; I get to utilize my pastry background while creating an experience that keeps the guest coming back for more. Minas Melba is a name lovingly given by our Food and Beverages Director, Brittany Lewitz, at first jokingly, but it stuck! It’s refreshing with a kick, and quite literally has my name written all over it.”
